Bulle is Fresno’s premier fine dining destination, opened in March 2026. We deliver an elevated, intimate dining experience with exceptional service, refined ambiance, and a seasonally driven menu focused on quality ingredients and technique. Our goal is to be the Central Valley’s standout fine-dining establishment, and we are growing rapidly.
We are seeking a talented Sous Chef who is ready and qualified to move to the next level. This is not a typical sous position — we want someone with the skills, creativity, and leadership to run the kitchen at the highest level.
Position Overview
As Sous Chef, you will work directly with chef Max McCarthy and the ownership to maintain the highest culinary standards while helping shape the future of Bulle. You will lead the kitchen team day-to-day. This is an outstanding opportunity for a driven professional who wants to build something special in a beautiful, high-end environment.
Key Responsibilities
Oversee daily kitchen operations, food quality, and consistency
Execute and refine our prix-fixe and à la carte offerings with precision and creativity
Maintain impeccable standards for food safety, sanitation, and presentation
Train, mentor, and lead the culinary team
Manage inventory, food costs, and ordering
Collaborate on menu development and seasonal changes
Ensure exceptional guest experience through flawless execution
Step into the Executive Chef role when ready (expected within 6–12 months based on performance)
Qualifications
Minimum 6+ years of progressive fine-dining experience (high-volume or Michelin/Big Four background strongly preferred)
Proven leadership experience as Sous Chef or Executive Chef in an upscale environment
Strong technical skills in modern and classical techniques
Experience with tasting menus, wine pairings, and high-end ingredient sourcing
Excellent knowledge of food safety, cost control, and kitchen management
Passion for hospitality and delivering unforgettable guest experiences
California food handler certification (ServSafe or equivalent)
Ability to work evenings, weekends, and holidays (this is the nature of fine dining)
